Two by the same artist twice.
"Walk, Don't Run" and "Walk, Don't Run '64" by The Ventures I much prefer the chorded solo of the '64 version.
"Think", original hit version and the one from The Blues Brothers, both by Aretha Franklin. In the movie version I think she brings off the pissed off attitude of the lyrics much better.

Phish has done Halloween concerts in which they "disguise" as other bands for the evening and play an entire album of theirs. I nominate Phish's 1996 live version of The Talking Heads' "Remain In Light".
I was floored by this at one time. I'm listening to it again, I hear that parts are shaky. While it may not be better than the original, it gets more compelling as it goes on. They jam more than the original band did, because that's what they do. The singer on "Crosseyed and Painless" even has David Byrne's voice down, not sure if that's Trey Anastasio singing.

Believe it or not, but my late beautiful precious Billy Joe Royal (No, I have not forgotten about him) took a shot at plenty of songs that were done first by other singers, around fifty of them to be exact. To me, they are all awesome. His voice in my opinion is smoother than a baby's bottom. God bless you and those who have loved him longer than me always!!! Holly P.S. Go here to get a good idea of what was covered by him.

Nancy Wilson does In Your Eyes better than Peter Gabriel.

I don't know if I would say this is better than the original, but I think it's pretty damn good...
