My old blender has 14 speeds. No idea how they decided what to name them.
Alphabetical:
beat blend chop cream frappe grate grind liquefy mince mix puree shred stir whip
Guess the correct order from slowest to fastest.

I haven't had a "blender" (one of the tall ones), for many years. I gave mine to my brother, because I figured that a regulation Cuisinart, a "mini" Cuisinart and a little milk-shake maker gizmo, were enough for one person.
I don't think mine had that many speeds. Chop, grate, grind, mince and shred, sound to be for solids. I recall that the instructions on mine cautioned not to use it without some liquid in the mix. It was very old, and they've probably become stronger, and more versatile.
I don't see a big difference between blend, and mix. I also see only a fine line between liquefy, and puree. However, it's fun to have some "bells and whistles," and, surely, the manufacturers count on that in their aim to please ... and sell.
