There was a scene in Infinity War where one of the Black Order (the Hulk wannabe) was about to kill Iron Man. Before it happens, Wong opens up a portal and he falls through, when he attempts to get back out though Wong closes it and it chops his arm off.
So why when they had restrained Thanos did Doctor Strange not open up a portal around Thanos and then close it around his arm to sever it and get the Infinity Gauntlet? Or he could have sent him into the sun perhaps.

I thought about that, too. When it happened to Cull Obsidian(?), it seemed like foreshadowing, similar to the beams connecting in Iron Man 2.

Well... because story. There were any number of moments when Thanos could have been defeated. Thor could have chopped of the arm too instead of going for the chest. Even Thanos says "you should've gone for the head".
We can analyze things to death, but overall a very good movie nonetheless!

My wife brought up this same point. What I noticed was that Strange didn't seem able to move his portals in this movie. He opened them and people needed to step through them, so Cull's hand was cut because he reach in as it was closed. With Thanos, Strange could open a portal but would still need Thanos to reach his hand through before he could cut it off... and that's not an easy thing to do when he's actively fighting people.
Of course, this goes against what we saw in Thor Ragnarok where Strange was easily able to move his portal to swallow Loki and Thor.

He created a portal and pushed it forward when sending Thor and Loki to Odin....so why not throw a portal at his arm? There was a scene where they had him completely restrained for about a minute. Why didn't he throw a small portal at him to separate his brain or his head from the rest of his body?

He opened a portal beneath Loki which after he fell through, he closed up.....so why not put a surprise portal beneath Thanos then close it when he's half way through it, cutting his body in half? 2. He created a portal and pushed it forward when sending Thor and Loki to Odin....so why not throw a portal at his arm? There was a scene where they had him completely restrained for about a minute. Why didn't he throw a small portal at him to separate his brain or his head from the rest of his body? Because... the doctor works in strange ways?

This shows the hypocrisy of MCU fans. After BvS, MCU fans kept asking "Why didn't Superman give the spear to Wonder Woman to kill Doomsday?" Well, we can ask why didn't they chop off Thanos' hand? A better question is why did Doctor Strange give the time stone to Thanos and lied by claiming that was "the only way" when it's now been clearly established that there were several other ways to defeat Thanos (e.g. creating a portal that chopped off Thanos' hand, Thor chopping off Thanos' head with the axe).
Seriously, if Thor had gone for Thanos' head (like Thanos said he should've done) instead of going for Thanos' ribs, then that would've been a winning scenario. Did Doctor Strange ever consider that scenario before just giving up the time stone to Thanos?Like I said before, that was really awful writing in Infinity War.

Giving your teammate a weapon when you're unable to properly handle it is pretty common sense though. Utilizing portals to cut off limbs when you've never intentionally used it for that purpose is a bit more unorthodox. And going for someone's head instead of their torso when you're hundreds of meters away, throwing an axe, while your target is moving and blasting you is pretty stupid. There's a higher degree of missing such a small target as a head than when you aim for center mass.
