I play FarCry Primal to experience the stone age. I play Skyrim to experience the middle ages with the occasional dragon and werewolf thrown in for flavor. I play Nioh to be a samurai and Red Dead Redemption to be a cowboy, and Call Of Duty WW2 to be a soldier. I play Sleeping Dogs to experience the present but in a much cooler way. I play Deus Ex to experience the near future(game seems an accurate prediction enough) and I play Mass Effect to see humanity's final destiny in space.

Red Dead Redemption 2 (set in 1899) is probably going to be the most realistic video game regarding that matter.

I highly recommend The assassin creed series then. They try to blend history with fantasy and have some of the nicest openworlds. Origins for Egpyt and Odyssey for Greece.

Another poster suggested Assassin's Creed and while I haven't played those games a lot I would say the do have convincing settings and recreations of some historical events, such as the storming of the Bastille.
I would personally recommend my favorite game, Age of Empire II: Age of Kings. It is a real time strategy in which you play as a number of civilizations roughly from around 500 A.D. to 1500 A.D. Each civilization has its own strengths and weakness and as well as unique technologies and a unique unit. For example, the Britons have the longbowman, Japanese have the samurai, Saracens have the mameluke, the list goes on.
The game also has a "encyclopedia" section on the main menu where you can read about the histories of these civilizations and warfare of the period.
There is also Age of Empires III which focuses on the gunpowder era, and Age of Mythology which focuses Geek, Egyptian, and Norse Mythology. Though, as you can probably guess, that game is based more on Mythology than history.
