I cannot get into Feta cheese. I also know a Greek man who despises it. My husband hates feta cheese and any other goat cheese, but he did eat some spinach and feta pizza (he didn't know the cheese was feta) and loved it. I guess on its own, feta is an "acquired" taste.

This chef Akis is the hottest thing in Greece right now.
My grandmother/mother/me never use green bell pepper. Too much difficulty for the stomach! Use cubanelle peppers instead. Also, capers can be in or out.
As to the feta, cow's milk feta (a north american affectation) tends to be a little "sour". You can sweeten it by soaking it in a water and milk - or just plain milk - bath to draw out the extra salt. Goat's milk and/or sheep's milk feta is creamier and much much more traditional.
And NO LETTUCE!!!!

And NO LETTUCE!!!! When I worked in Greece in the 70's, I never saw any iceburg lettuce at all and I never saw any lettuce served with salad. When I came back to the U.S. ,I was surprised when I ordered a Greek salad in a Greek owned restaurant, I got a big pile of iceburg lettuce. I guess they were "Americanizing" their "Greek salad." It was one of those marvelous 24 hour coffee shops that also served breakfast 24/7. Of course whenever I ordered salad at the various places in the 2 Greektowns in Chicago, lettuce was never included in a Greek salad. I prefer the goat cheese feta, I also like the goat cheese that comes in small rolls, Publix just has them labeled as goat cheese, no special name.

If you want an outstanding Greek cheese, buy some Kefalotyri which is the cheese used to make the Saganaki Greek specialty dish. I love this cheese!!!

Ok, here's the funny. I HATE HATE HATE!!!! Eggplant. So Moussaka is a big no for me. Or eggplant papoutsakia (little shoes). But his recipe looks good.
Actually, hate anything with slimy mouth feel - kiwi, melon, eggplant, mango....

Grossly over-priced in any Greek diner. You are lucky if they wash the lettuce.

A saganaki appetizer with a souvlaki main dish served with a glass of Rodytis Greek wine is as good as it gets... Would love this, just without the wine - I got drunk and was sick for days after drinking this wine, I'm not a big drinker and had about 3 glasses, never drank the stuff again.

Only souvlaki. No french fries. And a side of kaseri instead of saganaki.
Rodytis is good as is agiorgitiko. But even a nice barrel wine or retsina.....
