Here's a little gift for those who haven't read them (the site I got them on has been down for a long time and the archived version doesn't have Rm w/ a Vu):

The deleted scenes are actually amongst my favorite things in the fandom, because we have seen none of them outside of Birthday and Waiting in the Wings.
Here's a bit of the City of... trailer that actually shows the deleted scene of Angel tasting Tina's blood, ripping his hand out of his mouth and scrubbing his hands in the sink. The WB censored it, but leaves a huge plothole given the opener and Doyle's warning speech about craving Buffy. This draft of the script also has the version with Whistler, not Doyle, and contains deleted scenes such as Angel being the only one who showed up at Tina's funeral.
Other drafts of particular interest include the version of Killed by Death that takes place BEFORE Angel loses his soul. In this draft, Angel is the one who rushes Buffy to the hospital, something later seen in Graduation Day, pt. 2. Killed by Death also had an entirely different villain (it's a creature that pretends to be a woman in the hospital) and it was Buffy's grandmother, not her cousin, who had been killed when she was a child.
The BtVS unaired pilot script was for a full 44ish-minute episode, not the half-hour cut-down everyone is familiar with. Angel was indeed cast at this point and David Boreanaz recently even mentioned filming his scene on the motorcycle at the 20th Anniversary (though his description is definitely different!). Another fun thing of note is the Master talking about having killed his last Slayer, who was a duchess, during the Spanish Civil War.
An earlier draft of Never Kill a Boy on the First Date has Owen Thurman previously named Chambers, who instead takes Buffy to a bowling alley, and the scenes of Angel have not been added yet. Buffy and Willow, then hyena!Xander discussing Angel in The Pack are also missing from this earlier draft. Most of Angel's major appearances are in the last-written scripts with scenes regarding him or cameoing him dropped into early scripts.
And then, of course, there is the unproduced AtS 1x02 script called Corrupt, which was replaced at the last minute by Lonely Hearts because the WB thought it was way too dark. In this version, Kate was an undercover cop, but had fallen completely into the world of being a junkie prostitute. Angel is also notably propositioned. Cordy's "Dark Avenger" opener from Hero was actually repurposed from this script.
A deleted scene that left a continuity error by its excision was Gunn confusing Angel's pig's blood in the fridge for V-8 juice. You can see blood on his lip for no seeming reason (if you don't know of the cut scene) in Darla.
