No more green smoothies. The latest power food is cauliflower. If you hadnβt noticed, your local grocery now carries not only fresh cauliflower but cauliflower chips, cauliflower fries, and cauliflower pizza crust among other foods. So if you want to be in with the in crowd and eat up the latest health food that will let you live forever, then get on the cauliflower train.

I love cauliflower, and have always just steamed it, and added a bit of butter and s/p. I've heard of mashing them, instead of potatoes. I might try that sometime. I like pizza (a lot), but I don't eat enough of it that it would make a healthier impact on me ... besides, I LOVE to chew in the big crust of regular pizza dough. Chips? I can't imagine them being a substitute for potatoes.
There are other greens that I much prefer to kale.

I remember a controversy of sorts some time ago when the cauliflower lobby was trying to market "cauliflower rice" - which was not, as one might expect, rice with cauliflower, but simply cauliflower chopped in little pieces the size of rice grains. The idea is to replace rice with something with far fewer carbs but a similar texture. Rice producers of course didn't like that very much.
I like cauliflower but I almost never buy it.

I just bought some insanely fresh salmon from a nearby store that has it delivered daily. I was going to get broccoli from the adjacent produce store. However, the store was featuring beautiful, large heads of cauliflower for 99 cents ... each, not "per pound."
I now have a lifetime supply of cauliflower - just one head.
I was going to steam it, with butter and s/p, as I said I usually do. But, I found an olive oil/garlic/Parmesan cheese recipe, that looks so good (and is simple). I'm going to do that tonight, but I have a lot of cauliflower to eat, so I'm looking for more recipes.

We tried Oh That' s So Good Pizza and we called it Oh That's so Bad. I love cauliflower but I prefer to steam a head of fresh cauliflower. Cauliflower is one vegetable I prefer to buy fresh, the frozen cauliflower doesn't taste that good to me.

You'd think cauliflower pizza crusts would lower the salt content, but no. I use cauliflower rice - by shaving the edges off a cauliflower. The idea that this is sold as a convenience product is ludicrous - the stuff just falls off, and the rest lasts longer. Do you "shave" it off with a chef's knife, that's just skimming the edge of the head, then make a finer chop to bits that are larger than you want? I've watched some videos where they put it into a food processor ... which means hauling the processor out, and cleaning it. A drag. I'd much rather use a "shave" system. One of the chefs, on a video commented on how outrageously expensive the pre-riced products are. I think I'll try rice tomorrow night.

divtal if you like it with cheese β¦. steam as per normal and when it's done almost to perfection ~ turn off the heat ~ put some (a hearty handful) of grated chedder or Colby on it and leave the cover on the pan while you dish up the rest of the meal . cheese will melt and make a nice light cheesy soupy sauce .. a bit o'butter may or may not be added as well.

well, kale was never in for me. I always remember it as being the decorations at all-you-can-eat buffets. Cauliflower - yum. Steamed, olive oil and lemon. No other way. My husband mashes and fries the leftovers.

I make a 'potato salad' with cauliflower and a loaded cauliflower casserole that tastes like loaded baked potatoes. I have a recipe for 'cauliflower steaks' that I haven't tried yet. I've made cauliflower pizza crusts and used the frozen riced cauliflower too.
I only feed kale to my chickens. :-)
