Funny you should ask. Just the other day I found a can of sliced palm hearts in the back of my kitchen cabinet with an expiration date of 2015. I opened it, smelled it, tried one piece, and since it tasted good, proceeded to eat the rest (without getting sick).

I've drunk Coke past it's due date (a few months past) but I'm anal when it comes to expiration dates, I'm the nutty shopper who is always checking the expiration dates before putting anything in my shopping cart. I've had true food poisoning when I was younger and I still remember the misery - I didn't care if I lived or died, I felt so terrible.

The hot sauce bottle I'm currently using says "Best by November 2013," but that's not really an expiration date.

I freeze meats and eat them months later all the time. I also use spices with disregard to the expiration date.

There's a peach flavored fruit cup that's been in the fridge at work since the Obama administration. I really wanna eat it, even though the best by date was early 2016.

The rule "When in doubt throw it out".
That is the rule I live by!

I haven't bought canned soup for many years. A couple of years ago, I found a Campbell's Cream of Mushroom soup that was so old that it didn't even have a "best by," or other date, at all. The sticker on the can read $.79. I tossed it. I think that the value of expiration dates is a mixed bag. For meats, and other perishables, I follow "use or freeze by," dates. I'm a little more relaxed on "sell by," dates ... say 3 days. For condiments, etc., I don't worry much. Of course, the two tell-tail signs of "outdated," are fuzz in the jar, or a corroding lid. It's a fine line between being a helpful guideline, and planned-obsolescence, which benefits the manufacturers bottom-line.
