Which do you prefer, and why?
Honestly, I like to just make up my own ideas as to what happened between movies. Sometimes I'll use the official canon to inform my own head canon (like TCW), but I'd rather just use my imagination. I only change my mind on something when a movie contradicts what was in my head canon. But that hasn't really happened yet.
For instance, I don't like all the details about what happened after RotJ, so I modified the story a bit in my head. And until a movie tells me I'm wrong, this is what I'm going to be imagining.

Anything with Maul living after TPM isn't part of my head canon....

Nothing wrong with that at all! It's just those who get all bent out of shape when their head canon doesn't match up with the continuing story that end up disappointed and angry. I have a lot of head canon leading out of this last installment, leading into the next. Maybe some of it will be right! Probably not that much, but it tides me over the 2 years between the 2 hour movies!

If something in TLJ contradicts my head canon for the events between RotJ and TFA, then I'll adjust.

I don't watch the animated stuff, so when I learned he was alive in one of the animated shows, I was like, "Dude got cut in half!" Then someone explained to me how he had survived and had bionic legs and crap, and I was just like, "Dude...got cut...in half!"
