American tofu is quite soft, but Canadian tofu can be very firm and solid. I love it sliced raw, with a little salt.
Any raw tofu eaters out there?

I'll eat it raw in my salads, although I can't say I've ever noticed an "American" tofu as compared to a Canadian tofu or what have you. I get whatever brand Trader Joes or Fairway has, and it comes in firmness varieties.
I typically grill it after marinading it, the firmer ones hold up well to grilling the best.
At my favorite Japanese restaurant in Brooklyn, Zenkichi, they have this silken tofu dish, served in a dashi broth, that is among the best things I've ever had.
