Are they forgettable to you because they don't appear in the show?? In my mind, Hyle Hunt, Nimble Dick, the Brave Companions, Lady Stoneheart, Rorge, Biter, the Elder Brother, Ser Shadrich, are all incredibly interesting characters. Not to mention the locations she travels to are all fresh and fascinating. Duskendale, Maidenpoool, the Quiet Isle.
Her conversation with the Elder Brother, is pivotal to the entire theme of the series, and her final confrontation with Rorge, Biter and subsequently Lady Stoneheart are tense and exciting.
If you think the show version, where her and Podrick do nothing but wonder around and miraculously run into Sansa and Arya is better..... Then thats fine I guess. Thats your opinion.
As to the rest of your post. I don't really know who or what your talking about.
I've always maintained the show was mostly great for the first four seasons, before it started nosediving in quality. And there are plenty of notable Youtubers and Reddit users that began pointing out the shows serious flaws starting with season 5. Who are these people that in your mind are suddenly saying the show sucked from the start?? Because I haven't come across them.
Oh...I was talking about people's online behavior regarding the show vs. the books. People's tendency to romanticize the books because they hate the ending of the show so badly, and being blinded that the books are not perfect either. I then said that since the books are incomplete, they don't suffer from all that disappointment that came with the show finishing. What people want from the story is still possible with their fan theories/expectations through the books. GRRM certainly won't rush out the books either (haha), which was a big complaint with the show.
You're lucky then! Who are they? No idea...it's the Internet.
Note: What I said above isn't me arguing the show is perfect by any stretch. As you mentioned, there is a huge, significant drop in quality after season 4. I still shudder at what was done in the show with Stannis, Brynden Tully, the Faceless Men, etc. In terms of dialogue, no one could argue that Tyrion has any of his wit left after season 4 (it's all just cock and drinking jokes by then). GRRM certainly has the special gift to write for Tyrion, who I imagine would be quite difficult to write for and get it "right".
It's just good to recognize that the books aren't perfect either - it brings perspective and impartiality into the discussion of the series. I realize others don't care about that, but pointing that out was the only reason I responded to you to begin with.
