Petrale Sole has a very distinct flavor, and works well with a little butter and lemon. It's really not a true sole ... so I'm told ... but, a bottom-feeding type of flounder. It's much more flavorful than the very bland Dover Sole.

I can no longer eat fish (allergy) but when I could eat fish, I loved Lake Perch, can't even find it here in the South. When we lived in the Chicago area, my husband would often stop at one of the fish shacks near the steel mills and bring home a sack of Lake Perch, a sack of fried smelt, a sack of fried shrimp and a tub of creamy cole slaw. We would sit on the floor with the cats and have a picnic.

But at least you're honest - I'll give you that! lol great stuff! the last great fresh fish i had was a santa barbara halibut. overall, if it's fresh--i'll like it---i look more towards the freshest fish rather than a type when i buy.
