The Phantom Menace - Duel of Fates One of the most energizing and exciting pieces in all of cinema. For all the faults Episode 1 has, Duel of Fates took it to new heights.
Attack of the Clones - Across the Stars The score expertly combines romance and tragedy. Much like the marriage between Anakin and Padme.
Revenge of the Sith - Order 66 Really creates a tone that evil has won.
A New Hope - Binary Sunset/The Force Theme Beautiful. The way that the piece transitions from a lone sad horn to a orchestral crescendo is a great metaphor Luke's position as he feels trapped on a desolate planet and missing out of infinite possibilities that the galaxy has to offer.
The Empire Strikes Back - The Imperial March It was a toss up between this, The Asteroid Belt, and Yoda's theme and while I would like to go against the grain I have to pick The IMperial March. The imperial march has become a piece of pop culture history representing tyranny and the "unstoppable force".
Return of the Jedi - Victory Celebration Out of all the changes made with the releases, this is the one I like the most. Unlike to original score, this one had a sense of finality and bittersweet nostalgia. While the ending to Jedi is a happy one, it was rather sad to see the beloved characters go. Thus I felt this track did a better job of wrapping up the saga.
The Force Awakens - Scherzo for X-Wings Has an enjoyable sense of fun and excitement. The reused bits thrown in also help create a sense of familiarity, making it feel like the "good ole days"
The Clone Wars - Battle Of Christophsis Normally I would disregard this movie(as it wasn't really a movie), but I actually really like this track. Very underrated.
Rogue One - Hope I thought this was a good combination for choir music from the prequels with the orchestral from the originals. The best of both worlds sort of.

I am ashamed to admit that I don't know the names of them all but...
TPM- The music that plays as the droids are landing on Naboo... "Droid's Theme" maybe?
AotC- The music that plays on Kamino. Very brooding and mysterious. Let's call it: "Stormy Ocean Bounce"
RotS- "Duel of the Fates"
ANH- "Binary Sunset"
ESB- "Yoda's Theme"
RotJ- "Jedi's Fury"
TFA- "Rey's Theme"

I'm going for more underrated, alternative pieces:
TPM - Ben Hur-esque march at the podraces
AOTC - brooding mystery/Dooku theme (mostly in the brass)
ROTS - Anakin's dark deeds and Padme/Obi scene music
ANH - Jawa, droid room and auction music (the little people work)
ESB - Escape from of the space worm and escape from Bespin music
ROTJ - Brother and sister and fleet attack music (take evasive action)
TFA - Jedi steps
RO - Director Krennic's march theme and Jyn's salvation music at the end
TCW: Battle Of Christophsis and Ashoka music
