Last night was the first time that I've tasted this dish. Half hour in the oven with a little oil and man-o-man. What have I been missing.
Cherry tomatoes onion courgettes aubergines basil leaves red pepper
I kept some for tonight and been wondering about adding some brocolli, cauliflower and sprouts to this mix and roasting the lot. Any thoughts/advice.

Courgettes literally gives me an instant gag reflex.
Cauliflower would definitely work. It works well with tomato and red pepper.

I think it is ok, the older I get, the more stuff I eat. As kid I was pulling off all vegetables parts of a pizza, now, I add more on it.

Roast veg is nice, but I really dislike courgettes and aubergines 🤢

Aubergines and courgettes = eggplants and zucchini in this neck of the woods.
I enjoy roasted vegetables, but to have them just on their own as a meal seems a bit boring.

Radicchio, Fennel and Balsamic Vinegar for a bit of a difference.
Have to admit, this is the only way I can stomach courgette/zucchini and eggplant/aubergine. On their own and cooked poorly, both have the tendency to be weird tasting goo.....

intrigued you stated that Cauliflower works well with tomato and red pepper.
have you ever tried a 'Cauliflower' pizza crust pizza - i.e. where the whole crust is made of cauliflower.
betting this would be a great veggie pizza - have googled in the past - and there's quite a few recipes out there.

No, if I eat pizza, I want it to be real pizza crust. There is a oven dish I make, it has potato slices, lots of tomatoes, minced meat, cauliflower and spices, including red pepper.

Any thoughts/advice. That sounds horrible. Don't like zucchini, eggplant or basil. I'm somewhat ok with red pepper. Don't like broccoli or cauliflower either. And what are sprouts? Bean sprouts or asparagus? Doesn't matter not eating either of those.

aubergines are eggplants, right? and i love zucchini....they're great stuffed...their flowers are too....
love eggplant...would much rather eggplant parmasan than that with chicken or veal....
i'm trying a new recipe this week with the main ingredient being cauliflower, but also bacon, cream cheese, shredded cheddar...with scallions and sour cream as the garnish...not sure healthy this really is...but better than pasta and bread products...i'm trying to incorporate more veggies into my diet...

Try adding oregano, rosemary, tarragon, garlic, olives, capers and/or pepperoni. Okras if you can get them are also a good choice. And champignons.
You can roast it together with fish or seafood, too.
My personal favorite is frying it in a pan, aubergines, zucchinis, red pepper, mushrooms, pepperoni, the spices and herbs, capers, anchovies, green olives, with bits of chicken and a few prawns.

does anybody have a fairly decent veggie casserole recipe they can share....
me love me spinach cass - but im quite bored...…
here's the guidelines - i'd like a bit (not over the top meat) - whether it be tuna or chicken - lets see what you can come up with dolts

anybody else enjoy a cauliflower, broccoli, tuna fish and cheddar dish
here's what ya do folks
1 head of cauli-1/3 a head of broc, on the grill in silver foil grilling in olive oil with onion/garlic salt and peper - add the tuna 10 minutes in - then top with cheddar 2 minutes before serving.

Today's choice: Aubergines, fennel, zucchini, cherry tomatoes, small potato wedges, red onions, and pollo fino. Spices: a bit of garlic, oregano, basil, rosemary, chillies. Olive oil. Roasted in the oven.

There's one Italian dish I like a lot. Don't know whether it qualifies as mediterranian vegetables, but since you mentioned cauliflower, here you are.
It's a casserole of noodles (penne) and cauliflower essentially. Cook the noodles and cauliflower al dente. Roast the cauliflower with garlic, white pepper and muscat in a pan. Put the noodles in a casserole dish, cover it with the cauliflower, and feta. Put it in the oven for 20 min.
