This look delicious, I wish I could make a frittatas but I have absolutely no talent when it comes to cooking eggs. Its always a big fail.
There used to be a restaurant in Albuquerque called The Egg and I (after the old movie starring Claudette Colbert) and they really knew how to prepare eggs. I wonder if its still open.

I wonder if its still open. that place sounds great! i bake my frittatas in a stainless steel pan in the oven---much easier! like at around 300 for 10 min.
