I was going to do a pot roast that I found at a good price, yesterday. However, my brother is in the evacuation area in Sonoma County, Calif., and is trying to make his way here. The roads are all slow, and smokey. I'll put off the roast, until tomorrow, because I don't know how to plan, or how he'll feel (whenever) he makes it. We may order out for pizza. Please keep good thoughts. all good thoughts your way! Thanks, Nuts. I, finally, heard from him a few hours ago. His small enclave of neighbors had decided to "stick it out." And, things in his area seem to be improving, as the winds are shifting in other directions ... which means other victims. But, they realize that tomorrow is another day, and things may reverse, again. I'd have left, but they made their choice. It's hard to make a judgement call. When I see hurricanes approach Florida, and/or the Gulf region, I don't understand those who choose to stay. I guess it's a deeply personal, and emotional choice. Back to the OP. I made a tuna sandwich for dinner. And, all is well.

Divtal : Sometimes people stay for hurricanes because they have no where to go and feel safer staying in their homes than being stuck on a freeway. We're lucky we never had to evacuate but we really have no idea where we would go and with all our pets, it would be difficult to gather them up and leave.

We're having stuffed cabbage rolls from Publix and Bob Evans mashed potatoes. Easy to fix, I just put the cabbage rolls in the oven for 30 minutes (they can be microwaved but come out better when heated in the oven) and I microwave the individual servings of mashed potatoes. I do very little "real" cooking nowadays because there are so many delicious things available that just need to be heated, this is great for just 2 people or even one person. I tried making stuffed cabbage rolls from scratch but they did not taste as good as the ones from Publix and were irritating to make. I rely on Publix, Schwan's and Stouffers for most of our meals. ( We like Stouffers meatloaf, stuffed green peppers and Macaroni and cheese)

I found a great buy on round-bone lamb chops ... lamb is my favorite meat. I'll rub it with garlic, use s/p, and broil it. I'll also steam broccoli. I'm debating yes/no on baking a potato. It isn't that I want that much food, tonight, but I just love left-over baked potato for breakfast.
I've never attempted stuffed cabbage rolls. They're great, but I'm slightly intimidated by the folding process, and having them hold together.

I have a smallish bottom-round roast. I have a bit of a busy week, ahead, and leftovers ... either re-heats, or sammys ... will be welcome. I also have asparagus, which is so good (and inexpensive), this time of year. I nearly OD on it, before the price shoots up, just after Easter.

Pork chops are good but I find they can be a pain in the butt if they don't cook right and come out a bit dry. I prefer lamb chops better.
