You can either make it in loaf pans, or pour the batter into muffin tins. Itβs on the chunky side, but terrific toasted with butter. 2ΒΎ cups minced Arkansas Black apples (2 or 3) 2Β½ cups flour 1ΒΌ cups oats 2 cups white sugar 1 teaspoon baking soda 1 teaspoon salt 2 teaspoons cinnamon 3 eggs, slightly beaten 1 cup canola oil 1 teaspoon vanilla extract 1 ripe banana, mashed Preheat oven to 375 degrees. Peel and mince apples in a food processor or blender. Line muffin tins with paper liners or grease two large or four small or six mini-loaf pans Combine flour, oats, sugar, baking soda, salt and cinnamon in a bowl. In larger bowl, combine eggs, oil and vanilla extract; mix well. Add dry ingredients and stir just to moisten. Add minced apples and mashed banana and stir only until blended. Pour into prepared pans; bake muffins for 20 to 25 minutes; mini loaves for 25 to 30 minutes; small loaves for 35 to 40 minutes; large loaves for 60 minutes. Makes 2 regular loaves.

Might be good but not very pleasing to the eye. Looks like a meatloaf gone bad. LOL

no matter how good it may be, will never make it. It's banana bread.....yuk. And the slather of butter on top doesn't cut it for me either. Give me carrot, or apple alone... or almost any other thing.

I like to chop some cranberries in a regular banana bread recipe.
