I always liked this record, especially the guitar solo. It's done by a guy named Glenn Schwartz. He left music to join a religious cult in Ohio. It's said that Duane and Greg Allman wanted him to join the band they were forming, but he declined and Dickie Betts got the job.

So this may or may not count as obscure, as the actual musician is relatively famous in metal circles (his name is Abbath), but this was a side-project he did that almost nobody knows about. I keep wanting to learn this whole thing on guitar (riffs are killer too) but I haven't gotten around to it yet (Guitar solo starts at 1:57):
On the other end of the spectrum, this is something I'd never be able to play if I lived 100 lifetimes. Musician (Shawn Lane) is one of those that's only known among guitarists, but otherwise completely obscure:
Because they used studio musicians, Steely Dan tended to have a lot of great guitar solos performed by guys nobody's ever heard of. Perhaps the best is Reelin' in the Years by Elliott Randall. This one I can actually play and it's fun as hell all the way through:

Amazing he gets that SRV sound out of an acoustic! Is that done with a midi or some such digital device? I don't think so. I saw him live once and he didn't seem to be using that kind of stuff. This video, and the live performance I saw of him was in the early 90s too.

I wouldn't call Gary Moore "obscure" but he's not a household name either

Check out the sample songs in my 2015, 2016-ish, 2017, 2018, and 2019 album release threads. Apart from Judas Priest, you probably haven't heard of any of those bands.

And most people think that's Jeff Baxter! Well there's several guitarists on that track including Baxter. I've never been sure who does what, but Wikipedia told me the solo was Randall. Really, there are a few "solos" in that song with entirely different tones, from the warm, fuzz-tone at the beginning, to that clean Tele-like melodic bit in the middle (followed by another fuzz-tone solo), so probably different guitarists did the different parts. I'm assuming Randall is the fuzz-tone.

Any of the soloing in Hocus Pocus by Focus. I'd have to look up the guitarist's name and he's excellent. Shredding before shredding was a thing.

Relatedly, Eric Clapton was amazed by the guitar solo here and asked the producer, Tom Dowd, who it was. Turns out it was Duane Allman who was a Muscle Shoals session man at the time. Of course, Clapton worked with Duane Allman on the Derek and the Dominos album, which was produced by Tom Dowd.

Fine by me though. Here's another not obscure artist heard on a track almost nobody knows. Voice/Sax is A. C. Reed.

Fine by me though. Pickett's Hey Jude was released in 1969, when the Allman Brothers were just forming. Allman was only known by studio musicians and a few performers.
