I don't know about "better," but I like creative covers that do unique things with their source material, like this Metallica medley from S&Z:

Great cover, though for me the original is unbeatable. I also like the T.A.T.U. version. (Snake River Conspiracy version is shite).

This always appears in such threads
But his best I think is a cover of this Sting track.

There's no YouTube video for this unfortunately and I don't know if I'm able to embed Bandcamp links. sayohimebou.bandcamp.com/track/kool-the-gang-coverWhere do I begin to describe this cover of Kool & The Gang's "Celebration? Hyper frenetic, colourful IDM / breakcore / mashup thing, with ridiculously fast beats, layers upon layers of synth bleeps, pounding bass, effects, and processed vocals. It's utter madness and it puts a massive grin on my stupid face more than K&TG's original ever could. This will only appeal to very few here but I'm so in love with everything by this guy or gal or group (there's too little info about them and most of it's in Japanese) I just wanted a place to gush. Sadly Sayohimebou has a low number of ratings on RYM. If more people listened more people would realise that their FREE albums (well pay whatever amount you want) on Bandcamp are better than Iglooghost.

It's properly cheap and cheerful in a way which reminds me of DAT Politics and the old Tigerbeat6 bands for a short while. Drum and bass for hamsters.

I notice that Nirvana have been mentioned a few times, but for me I think I have to go with their cover of Devo and the song Turnaround, which I really dug back in the day, not really knowing it was a Devo song to begin with, and I guess is also one of the main reasons to why I really enjoyed the Incesticide (1992) record, which I think was probably a bit of a way of continuing milking the success of Nevermind (1991), but also a great way of showcasing that the band had more to come up with, and so many of these rarities, b-side and covers brought a lot of fun with them, and actually some of Nirvanas best moments also.
Another one, is Thomas Dolby and I Scare Myself (1984), which I really enjoy, and I think it is kind of sad that he did not have enough time to continue on with the more imrovised and rich sound that some of the stuff he did on The Flat Earth. Instead a hasty telephone call from his record company pretty much ended up with him travelling to America to become a "pop star". I guess people expected him to continue with his more goofy and eccentric Synth pop music, but by 1984 he really had something special going on, and since it took almost 2 years before She Blinded Me With Science (1981) broke into the top 5 of the Billboard list, seeing him now, doing stuff like I Scare Myself or Mulu: The Forest, must have been, well not really what neither the record company or the american audience had in mind.

I think that Michael Gira would probably "strangle" me, as I think he has not very fond memories of the World of Skin era, maybe because of problems with the record business, trying to push them out as more "sellable" or something like that, but no matter what, I really love and will always do, their impressive cover of Joy Division and Love Will Tear Us Apart. Most of the covers of that song that I have heard, often tend to be maybe a bit far too "respectful" and by not going too far away, or just ending up sounding not that interesting or kind of dull. But Swans delivered one of those that almost makes it out to be a "feel-good" upbeat song, and I guess it is maybe also another reason to why I enjoyed it so much to begin with. It stands out, and I still to this day prefer it over the original.
