I've done scrambled eggs in the microwave before, but it has been quite a while since I have done it, and so I am not 100% certain right now how I did them... I think...
I take a large round bowl, and I add a little bit of milk to keep the eggs from drying out too fast. Then I add a dash of salt for taste, and stir it into the milk. Next I crack open about 6 eggs, two per serving, into the bowl. Then I stir the ingredients together until it looks well mixed. Then...
Microwave the eggs on high for about a minute. Stir. Microwave the eggs on high again. Stir. Repeat the process one or two more times if "desired"...
But, I like to make
Scrambled Egg Sandwiches with the eggs: White Bread, Scrambled Eggs, Mayonnaise, and American Cheese... So...
I need the eggs in the large round bowl to become one large solid mass, when it is done cooking. So... I make sure that the eggs are still a bit "soupy" during the last stir. Then I microwave them until they look almost dry or just shiny.
Once done, I cut the eggs in the bowl into six equal triangle slices. Then I take out two slices of eggs from the bowl and place them side by side onto a slide of bread, but pointing opposite directions...This forms an "almost" rectangular shape. Then I add a slice of cheese, mayo, and then another slice of bread to create the sandwich.
The six eggs (1/2 carton) makes three sandwiches.
You can let the eggs cool if you wish. The sandwich is good with hot or cold scrambled eggs. You can also save egg slices for one or two sandwiches, for later on... It only takes a few moments to reheat the egg slices again. (Whatever you prefer.)
I think they are really good.
Some people might enjoy: substituting ketchup for mayo... or adding lettuce and/or tomato slices... Maybe even add additional toppings. Bacon perhaps?
