Although I have watched neither, I understand that both Star Wars: The Clone Wars and Star Wars: Rebels have both enjoyed moderate success on TV. The main reason being that both of these shows seem to cater to both young and old audiences. I would still prefer an even more complex story and character gallery, though.
If I had to make my own rough idea, I would want to see a story of a Jedi that becomes mixed up in the world of crime. Maybe the Jedi becomes a hitman or enforcer for the Hutt family or a lighsaber-wielding right-hand-man to Boba Fett. The story could also collide with the likes of Obi-Wan and Darth Vader depending on the timeline.
Anyway, what idea would you like to see? You can be as obscure as I was or as specific as possible.

They'll probably do a series that takes place between ROTJ and TFA..meh.

The Star Wars Universe is one of infinite possibilities and I feel that needing to tie a potential animated series to an established film or event is very limiting. As such I'd like my hypothetical series to carve out it's own little corner of the Universe. it would be set in the time of the Old Republic, approximately 200 years before the events of the prequels. To the best of my knowledge this is a time period we haven't really explored before allowing the series to be free to create it's own mythology and avoid cliches like young versions of established characters (except maybe Yoda). But at the same time it still include enough familiar iconography, planets/ locations and species to make sure it's unmistakably Star Wars.
As for the what the series is about; my first instinct would be Jedi. Basically an action adventure series following Jedi acting as guardians of peace and justice during the glory days of the Republic. But since the setting is expansive enough to support multiple series I'm going to make a secondary suggestion of a series about pilots with more of an emphasis on space battles and vehicular combat.
