How about Julia Roberts, Cameron Diaz, Carrie-Ann Moss, or Tricia Helfer ?
Does anybody here think any one of them would be a good choice to play 'Mrs. Voorhees' in a Remake ?

It really depends on the level of involvement Mrs Voorhies would have in the remake. Any of the actresses mentioned could fill the final 15 minutes of crazy akin of the original.
Im still a fan of using an older actress with a horror movie history. Just because im a horror nerd.
