For me, it's the train fight in Spectre.
It was gritty, realistic, and James Bond actually got tired fighting his bigger opponent.

It's a toss up between this and the fight with Red Grant in From Russia With Love.... From Russia with Love has one of the best fight scenes in movie history. Its very realistic.

I also really liked this fight scene in the movie:
And if the parkour scene could be considered a 'fight scene', I would include that too.
Before Casino Royale was released, my favourite fight scene was Bond vs Trevelyan in Goldeneye.
