From 2000 to date here are the only Western's good enough to be among My Favorite Movies in general (which is basically everything I scored a 7 or higher)... 1. Open Range (2003) - 10/10 2.True Grit (2010) - 8-8.5/10 3.Hostiles (2017-2018) - 7.5-8/10 -.Django Unchained (2012)
5.The Lone Ranger (2013) - 7/10
-.Appaloosa (2008) 7.The Hateful Eight (2015) - 6.5-7/10
Honorable Mentions: In a Valley of Violence (2016)/Seraphim Falls (2006). I give both a 6-6.5/10 which are just shy of favorite movie status.
p.s. There Will Be Blood is not a legitimate Western. EDIT: accurate as of May 28th 2019.

The remake of 3:10 To Yuma is the best post 2000 Western. Russell Crowe made an excellent outlaw.

Haven't finished it; but so far Outlaws and Angels (2016) has quite a kick. Probably not the best; but on the list.

3:10 to Yuma is probably my favorite, with outstanding performances by Crowe and Bale.
I recently watched The Lone Ranger, which is far better than I expected.
I have sworn not to watch Tarantino films after The Inglourious Basterds.
