If I cut up the whole mushroom, they get cut up as well, except maybe the very tip.
If I roast mushrooms, I either roast the whole mushroom, or pull them and roast them along with the caps. Can eat them first if the caps are too hot and or stuffed.
Do you
toss them out?
use them differently than the caps?
Assuming you like/eat mushrooms.

i'll do 'em like you do,cook stems like the rest if i'm making stuffed mushrooms i'll chop the stems very fine and mix 'em in with whatever i'm stuffing with

...I love mushrooms...I generally g\cut them from the side and include the stem in the slicing. I used them in omelettes and stews.

It depends if the stems are too woody. That type I will freeze and later use them in stock.

I just melt some butter in a frying pan and stir fry them. Sometimes I will add them to my salads.

NJtoTXPeople throw out all sorts of usuable stuff. it's amazin' to see what they throw. My mom was buying beets at a grocery store when I was a kid and she didn't want the beet tops so she had the grocery take them off for her. A neighbor saw this and got on her case because you were supposed to "eat the green tops and throw away the red part." I know some people throw out the ends of bread. Even on home made loaves.

I like beet tops, but I hate beets. I do tend to toss thick branches of chard leaves, broccoli stalks, etc. I've tried to freeze and use them for stock but I don't have the process down.

NJtoTXFresh and small beet greens are nice in a "fresh from the garden salad" but those tops that come on the store bought beets are just too old and nasty. This neighbor in the store was sort of the local crackpot in many ways and not just about veggies I don't really care for the tops cooked. Pickled beets are good or beets cut up with some honey, butter and a little orange juice... yum.
For stock, I steam the bit and pieces in not a lot of water and then just freeze the juice to add to soup etc.

Lunch today I cook the last in a bag of frozen broccoli *. There's a lot of those little bitty pieces left in the buttery water. Inspired by this thread, they are now in a freezer container awaiting additions of other "little bits plus juice" to try to remember to use at soup making time. Thanks... NJtoTX* Broccoli is one of the few veggies I actually buy frozen. When I grew it, there were always so many little green cabbage worms that it was basically a meat dish.

The texture of the stems is a bit different. But, they're, still, a source of flavor, so I work them in any way that I can. (Nicorini, it's so great to see your posts, again!)
