Does it seem like a random question? Well, this is a genre that focuses mainly on the fights that story, characters and dialogue are often tossed aside.

Good question. Enter The Dragon probably earns first place for its simplicity but more recent examples which I found to be really ambitious like Hero, Crouching Tiger Hidden Dragon, and The Raid 2

Wu Xia (Dragon) / Peter Chan (2011). A good script and a fine performance by Donnie Yen leads this martial arts / character study which is something of a mash-up of “Les Misérables” and “A History Of Violence.”
Chi Bi (Red Cliff) / John Woo (2008). An epic with epic sweep and battles but mainly focuses on relationships, political maneuvering, strategy, and tactics. Many great characters.
