The first one was the rural scene with the
massacre of the farm family
The second was the
death of Logan, which showcased his redemption and sacrifice for his "daughter"
I don't know if spoiler tags are necessary anymore, but whatever.
There are also several other scenes that I could mention, but those are the two most prominent that lend the most to the central theme and elevate the movie.
It shows the kid and the father's death, but not the mother, who was stabbed off-screen. It also shows Professor X's death on top of that.
