All of your assumptions are based on the idea that Wakanda somehow has no learning institutions of its own and that all of the best learning institutions are in the West. Within the Marvel Universe, that couldn't be farther from the truth. You wouldn't ask the same question of Tony Stark because the answer would be irrelevant. The real (and frankly obvious) answer for both Tony and Shuri is that they are geniuses who would have likely arrived at their level of knowledge and mastery over multiple fields regardless of where they were educated. For a deep dive into the Wakandan culture, government, and its education system (which differs radically from its hyper-capitalist western counterparts in structure and pedagogical approach) see Ta-Nehisi Coates' lauded run on Black Panther and Roxane Gay and Yona Harvey's World of Wakanda. You need to be educated by the brightest minds and prestigious institutions in the world. Stark has access to modern day universities and literature research. Shuri lives in Wakanda, where they do not exchange information with the outside world. Who is teaching her biomechanics, organic chemistry, metellurgy to a level that most western students wouldnt even dream of possessing? Well first they may not exchange information, but that doesn't mean they don't receive information from sources. We don't know if Wakandans have access to the internet. I pretty sure with how technical they are they can without being detected. And also you don't know how good the schools are. Just because they don't connect with the outside world that doesn't mean the have crappy schools. Who is to say that 200 years ago they had a scientist that figured out E=mc2. They are a few decades past us in science. It's not like Einstein was the only person who could've come up with his Theorys. If you don't want to got the route that others in Wakanda have figured out most what we know now without contact with outside world we can go with Srinivasa Ramanujan. In real life Srinivasa had no formal training in Advance Mathematics. He made substantial contributions to mathematical analysis, number theory, infinite series, and continued fractions, including solutions to mathematical problems considered to be unsolvable.
