Then you're in for a treat. As a Seinfeld fan, you'll love Curb Your Enthusiasm. Just a heads up, the early seasons are kind of raw. Curb fans will hate me for saying this, but you might want to start with Season 8, just to ger your feet wet, as those episodes are perfected. Then once you get into the show, you can appreciate those older seasons more.  I was about to ask this very question because I did watch just one episode years ago. I forget what season it was but it must've been a season one or two episode... And I found it funny, but also very improvised. I kept thinking "man this would be excellent if they just rehearsed it a little more" So if I start in season 8 will I be lost when it comes to the plot or characters? No, you should be okay. Like Seinfeld, there's maybe a tiny bit of plot/character history, but for the most part, the episodes stand on their own. Now you will be lost with Game of Thrones if you don't watch that one from the beginning.
