If you could open up your own food place what would it be?

Back in the 80's, I used to go to a Japanese steak house in Highland, Indiana (right outside Chicago) called Kobe's, it served the famous Kobe steaks and they were cooked at your table. It was delicious and I'm not a steak eater.
