As you said, the differences are slight but I would go with the Director's Cut.
The even more exaggerated death of Kinney works better with the two punchlines in the scene ("Somebody wanna call a goddamn paramedic?" and "Dick, I'm very disappointed") on a comedic level and the longer and more graphic scenes of Murphy being killed makes the villains seem even more detestable.
Though I suppose if you can't stomach excessive gore, just stick with the Theatrical Cut. You don't miss out on all that much.
