Because it minimises the subjective feeling of harm to the animal. Although the animal's life and the way that it has been treated up to that point is still very harmful to it. I also had the impression cutting a carotid artery was a preferred method of suicide, faster and less painful than wrist slashing. Perhaps it's obvious I am no expert on killing. The existence of the animal, and the fact that it was created for the purpose of being used by humans is the most problematic fact. But we should at least stun it before killing, so that it does not experience the sensation of having its throat cut.
