my biggest problem with it was it didn't do enough to really set up Dracula as the villain we all know him to be and I am not sure if that was 'cause there were plans for a sequel that would have seen the character going down a darker path but at the end of the movie he looked more like an Anti-hero than a soulless monster and I was expecting him to be more evil and sadistic at the end.

I think you're probably right that they planned to take him down a darker path in a sequel...had there been one.
