As for the color scheme, it would seem that the process of battering, and deep-frying everything, lends itself to a uniform "neutral tone." One possibility for that, however remote, might be to reduce "selection anxiety," for those who have difficulty deciding what to eat/eat next.
I suppose that there is something to be said for Mr. Singh's entrepreneurial spirit, and effort at marketing skills. I can't take that away from him. But, he wouldn't be able to take $13.00 from me, either.
