I was going to suggest they had the Royal Guards in that scene because those red uniforms really pop and contrast Vaders black in a way that looks cool.
Sadly, I think that's all it came down: it "Looks so, so, so cool! Let's put them in the scene!"  I do like visuals (Star Wars is full of them) but it's also important to me that everything compliments each other in terms of continuity. The moment with the Royal Guards took me out of the movie. It would be like seeing Luke Skywalker in Episode 7 being guarded on that island with several Gamorrean guards...Does not compute! Does not compute!   At least we got him for one movie, right? He said at one point that he almost turned the role down. Fortunately, he had a change of mind and Rogue One is definitely a better movie for it.
