Haven't seen them all, but there are some enjoyable watches on this list.
If I had to pick 2:
Rocky V - I'm with many posters above...I actually really liked this. Focusing more on story than the over-the-top elements of Rocky IV, if you like the character, there is a lot to enjoy here.
2010 - I don't get the flack this movie gets. 2001 was such an experience, that I don't think it could really be topped, but 2010 is a bold try.
Also good:
French Connection II - Same sentiments as for 2010. Also Hackman is awesome.
Rambo III - I'm a big fan of Stallone, not just as a muscleman, but as an actor/writer...so I find that typically there is something to be enjoyed in most of what he's involved with. A lot of the dramatic elements of "First Blood" are switched for action beats, but it isn't a bad movie at all...just kind of shifts the tone a bit. Like "Robocop 3," a once adult-based character is watered down a little bit in favor of action.
A Good Day to Die Hard - The story is a little unbelievable, but it's fun. As many have said, John McClane is far from the 'everyman hero' by now, but he still gets some good action/comedic moments. Jai Courtney does about as good as anyone could standing alongside such an icon. Much better than say something like Shia LeBeouf/Harrison Ford in Indy 4 for instance...though honestly, who except Sean Connery could fill that spot. Though a little all over the place, at the end of the day, I had fun with it.
Honorable mentions go to:
RoboCop 3 - It was pretty watered down and aimed more at younger fans (the action figure crowd). It's also unfortunate Peter Weller didn't return, but it is dumb fun. My memory may be a little rusty, but the quick death of an important character to the series sat a little weird with me...
Conan the Destroyer - Could be my age, but Arnold can do no wrong for me. I'm still waiting on the fabled "King Conan." And I wouldn't bother with the largely forgotten remake...
Superman IV - It's become such a legendary misstep, which is part of the fun in watching it. Not the whole thing, but much of it is 'so bad it's good' if you're into that experience.
