I wish I still had mum's recipe for it.
It was a food group in its own right.
Awww... The best potato salad I ever had was, I believe, German style, served hot with a vinegar & sugar dressing and green onions and, best of all, bacon! Yum! And on the 8th day, God created bacon... Mum was Dutch. She was born in Eindhoven, near the German border.
Her ingredients included, but may not have been limited to, potatoes, bacon, bacon fat, onions, egg yolks, fresh cream and butter.
She made a special version for my mate's wife when she was pregnant with her first child. No onion...
