I make my own mayo when I do potato salad Mr D. I don't put vinegar in the mix though, but I do put fresh lime or lemon juice and some sugar. I imagine the lime or lemon juice would cut the richness of the mayo. And sugar and mayo are a wonderful flavor combination. Nummins! Both the citrus and the sugar help with a bit of preservative as well. It's just 3/4 cup oil, I use rice bran, 1 whole egg, citrus juice, sugar and a bit of salt if so desired and all blended together with a stick blender. Takes 30secs.
