Beyond Beauty: The Untold Stories Behind the Making of Beauty and the Beast
The Beginning (on the Phantom Menace DVD)
From Puppets to Pixels (on the Attack of the Clones DVD)
The making-of documentaries for the respective James Bond films on the Ultimate Edition DVDs (for example, Inside On Her Majesty's Secret Service)
I can't name a favorite audio commentary, but I did like John Canemaker's audio commentary for Snow White and the Seven Dwarfs. I do need to listen to Roger Ebert's audio commentary for Citizen Kane and Casablanca.
