Morricone is old school. A score takes a long time to produce (and it should!) He's not some dude with ProTools and a MIDI controller...he's still writing and orchestrating themes the old fashioned way. You don't get quality orchestral writing any other way.
I like both Morricone and Tarantino. Doesn't seem out of this world to deduce that perhaps Tarantino is a bit impatient with the length of time a true craftsman, Morricone, needs to produce a great score. Directors can be flighty and random, but that is something rarely gifted to the composer.
Source: Me. I've scored more films than I have fingers. I'm the flake of a bird turd hoping to make it into Morricone's shadow one day. The dude is legit. Calm it down QT, this man is a legend.
