She went into hiding. Many Jedi went into hiding. The best examples are Obi Wan and Yoda.
It is not that difficult to imagine that she stayed hidden during the five years before the OT and then during the OT.
I am glad they made the decision to allow her to live after Vader and Palpatine. I look forward to seeing more adventures with her.
