All too often, restaurants will take a beautiful piece of fish and drown it in sauce and some sort of slaw/salad concoction. Heresy. Cook it properly with a small amount of sauce, and presto.
Same thing with sushi. The fish, the rice and a drop (and I mean literally a drop) of sauce. You don't need mango sauce plus kani salad on top of it. Stop ruining perfect ingredients by overdoing it.
