This looks good, I love red cabbage. It looks simple enough that I could try to make it. Anyone hear from Socks? I pm'd him but got no response. It's delicious! I wish I had added a coarsely chopped onion to the mix, too, come to think of it, but I'll do that next time.
One word of caution about making this dish via the oven method, is that the very pungent smell of cooked cabbage will permeate your house or apartment for at least 12 hours or so after cooking! So keep that in mind, in case you were planning on having company over soon, or something like that. lol
