It's not going to be for everyone, especially if you don't care for black and white photography. That said, I don't think it's pointless so much as a little extravagant. Fox is obviously very proud of their work on Logan and rightly so.

I thought the black and chrome edition of Fury Road added a new dimension to the film although, I wished they'd have pushed the grain a bit more.
