And who said they don’t? I have no problem with Marvel or any other producer making an R-rated comic book movie. There’s plenty of violence and soft core porn in the comic books themselves. The people saying Blade and other characters can work without r ratings. It's possible for it to work without an R rating. It might have to rely more on story and characters though. Nixing some of the blood/gore and cursing. (And the MPAA has always been more hung up on Sex/Nudity, then cursing, and finally violence and gore. Which always spoke volumes about their Puritanical Mindset to me. Sex and Boobies are BAD!!!!) Adding those to a story has always been used as a cheap way by lesser stories to evoke emotion and add to the "cool" factor. A way to turbo charge the story and characters past any blemishes. If nudity/cursing/violence is used in service of the story then all is good. If it's used to prop the the story up it is a cynical party trick used by movie makers. So yeah it could work without an R rating, but it puts more pressure on the Writers, Directors, and Actors to make it work.
