There's an ironic one that technically "ended too soon", after a fashion, but I might also say it could have ended sooner - Saving Hope.
It's a medical drama starring Michael Shanks and Erica Durance, originally made for Canadian television; picked up and aired in its first season on NBC. NBC cancels it after its first season, but here's the thing, it kept going in Canada and was phenomenal - especially after it's first season.
But I would also argue that it would have been better if it ended at least episode earlier than it did; and maybe even the last seasons, which probably wasn't its strongest....
Still a great series overall, and highly recommend checking it out; it's on Hulu for anyone not already familiar with it. Just maybe skip the last episode.
