I picked Kung Fu (Wong Style) because that is what I have a smidgen of active knowledge of. In the movies of recent years, I come to enjoy watching stars that use Muay Thai, the national martial art of Thailand. The Ong Bak films feature Muay Thai. From the same general area of the world comes silet, the style used by the star of the two "Raid" movies. I find them both very interesting and fun to see in action.
