I hadn't seen Hannibal Rising or Hannibal yet. As for the rest:
Red Dragon - 7.5/10
The Silence of the Lambs - 7/10
Manhunter - 5.5/10
Hannibal Rising can be skipped.
Hannibal is worth watching for a more OTT, darkly humorous and grotesque version of the Lecterverse. You can definitely tell it is directed by Ridley Scott.
