A healthy outdoor hike should be a great way to work up an appetite. Hope you enjoy your New Year meal!
I went for the guilt-free power breakfast - high fat/high protein - corned beef hash with two eggs and topped with some Kerrygold savory cheddar. With a cheddar Kaiser roll. Then I caught the perfect weather window (thanks wunderground.com!) - hit the trail right after a brief morning shower and before the afternoon rain kicked in. Found a nice side trail to go up and turned the "lollypop loop" into a figure 8. Dinner turned out to be two big Alaskan King Crab legs (a pound) dipped in clarified butter/EVOO/garlic. Delightfully decadent and a long overdue treat. Cost me next to nothing - 'cause I'm a black belt in getting the sweet grocery deals. Now it's time to finish that bottle of Wild Turkey, smoke a bit of top-grade, and hit the hot tub for some chillaxing with awesome tunes or perhaps a vid. Life is good. Livin' large by livin' small.
I'm no cook (a learner) so I always have tins, just in case. I've noticed the last couple of corned beef tins I purchased are now lower salt which sounds like a positive step forward. Sometimes I buy fresh corned beef, 4 slices in a pack, just for sandwiches to eat at work, but I'm more aware than ever about natural salts and the use of condiments.
I feel so heavy tonight, more because of drinking, but I know I need to get back to work to get some natural exercise.
