I often toss whatever's in the fridge/leftovers into a pot, and if there's too much for a meal, some of it goes into 5"X7" aluminum pans and is frozen. When it's reheated, it's a "casserole".
Tonight I'm making some kind of conglomeration with: - sauteed veggies: cauliflower, broccoli, onions, red bell pepper, celery, carrots, garlic - perhaps a half-cup of frozen peas and a half-can of garbanzo beans - about a half-pound of deli turkey + a large can of chicken - 8 oz. chickpea rotini pasta + 8 oz. whole grain rotini - a few cups of homemade turkey stock - can of Cream Of Chicken soup + some milk - cheeses + a packet of Kraft Mac&Cheese powder - spices/seasonings
It will be glorious.
